Iconic agave from western Mexico, but crafted through traditional Zacatecan Mezcal production methods to create a fascinating crossover spirit.
Fresh citrus zest, bright agave nectar, and subtle floral top notes, backed by an underlying whiff of light wood smoke and damp stone. It's slightly saline aftertaste makes your palate crave the next sip.
Agave piñas are cooked in traditional brick ovens (hornos) heated with firewood and volcanic stone. The cooked piñas are crushed using a classic stone tahona to gently separate the sweet agave juices which further go through fermentation in open-air wooden vats. The fermented wash is double-distilled in traditional 500L copper pot stills.
